Strawberry Cake Mix Cookies

- 1 Cookie Scoop or tablespoon
- 1 Wire Cooling Rack
- 1 Hand Mixer or wooden spoon
Ingredients
Cookie Dough
- 1 box strawberry cake mix 15.25 oz standard box
- 2 large eggs room temperature
- 1/3 cup vegetable oil
- 4 oz cream cheese softened, optional for extra softness
- 1 cup white chocolate chips or vanilla chips
Coating
- 1/2 cup powdered sugar for rolling dough balls
Instructions
- Preheat your oven to 350°F. Line two baking sheets with parchment paper and set them aside.
- Pour the strawberry cake mix into a large mixing bowl. Add the eggs and vegetable oil.
- Mix everything together until a thick, sticky dough forms. If you are adding cream cheese, mix it in now until fully combined.
- Fold in the white chocolate chips using a spoon or spatula. Make sure they are evenly distributed throughout the dough.
- Scoop the dough using a tablespoon or cookie scoop. Roll each portion into a smooth ball with your hands.
- Roll each dough ball in powdered sugar until fully coated. Place them on the prepared baking sheet about 2 inches apart.
- Bake for 9 to 11 minutes. The edges should look set, but the centers will appear slightly underdone. That is normal.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chill the dough for 20 to 30 minutes if it is too sticky to roll. Do not overbake — pull cookies out when centers still look slightly soft. Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
