Instructions
1. Heat a large nonstick or cast-iron skillet over medium heat. Add the butter and let it melt, swirling to coat the bottom.
2. Add the frozen corn to the skillet and stir to coat in the butter. Cook for 8-10 minutes until tender and slightly golden.
3. Reduce heat to low, stir in honey, cream cheese, salt, and pepper. Cook until creamy and well combined, about 5 minutes.
4. Stir in chives or scallions for added flavor.
5. Serve immediately, garnished with additional chives or scallions if desired.
Notes
For a vegan version, substitute butter with plant-based butter and honey with agave syrup or maple syrup.
