Instructions
 

  • Step 1: Gather all ingredients. If using frozen hash browns, ensure they are thawed. If using fresh potatoes, peel and dice them.
  • Step 2: In a large mixing bowl, combine the potatoes, cheddar cheese, sour cream, cream of chicken soup, and seasonings. Mix until well combined.
  • Step 3: Transfer the mixture to the crockpot, spreading it evenly.
  • Step 4: Set the crockpot to low and cook for 4-6 hours or until potatoes are tender. For a quicker option, set to high for 2-3 hours.
  • Step 5: During the last 30 minutes of cooking, add crushed crackers on top for a crunchy finish.

Notes

For a loaded version, add cooked bacon and green onions. For a spicy kick, include diced jalapeƱos.
